Andrew has been busy in the kitchen trying out a new dish with the Locally sourced British Blue Egg.

Andrew has created a starter of ​Pork Belly and Apple Hash Cake with Ham Hock Rillette topped with Poached British Blue Egg and Wholegrain Mustard Sauce. The British Blue Egg is a delicious pastel blue egg, with a vibrant golden yolk, and are laid by free range hens fed on a bespoke natural diet, containing extracts from brightly coloured flowers, on Fairburn’s Lincolnshire farms. The British Blue hen has been reared and developed in Lincolnshire by a local family and a percentage of the profit from the sale of the blue eggs is being donated to the Lincolnshire Coastal Country Park. Andrew enjoys using good quality ingredients with great flavour, even better when delivered straight from the farm.
